Avocado Fries

If you love avocados as much as I do, you'll love this recipe!

BAKED AVOCADO FRIES

2 Firm, ripe, medium avocados, pitted, peeled, and sliced into 1/2 inch wedges
1/4 Cup flour
1 tsp Kosher salt
2 Large eggs, beaten
1 1/4 cup panko
*Preheat oven to 450F
*Coat slices in flour, egg, and panko
*Spread on a cooling rack sprayed w/ nonstick spray, then place cooling rack on foil lined baking sheet
*Spray top of wedges w/ olive oil and sprinkle with salt. May want to add other spices to taste
*Bake 20 minutes or until golden brown.
*For a gluten free option, use rice flour instead of regular flour and nutritional yeast instead of panko. The nutritional yeast will give the fries a slightly cheesy flavor.
